Paul Cathare syrah-merlot-cabernet 2015

About the only place in France where you get the "Aussie Blend" of shiraz and cabernet is the watershed between the Atlantic and Mediterranean at the western end of the Pyrenées. Here the Limoux appellation produces ageworthy reds from a blend of both, plus merlot and carignan sometimes as well.

This excellent producer is drawing on his Cathar heritage - very strong in this area - to produce a dense, concentrated red that with a little age is now beginning to open up.

Still needs an hour or so in a decanter to be at its best!
